Prepare the Duxelles
Finely chop the wild and tame mushrooms, shallots, and garlic. In a skillet, heat olive oil over medium heat. Add shallots and garlic, sauté until translucent. Add mushrooms and thyme, cook until moisture evaporates and mixture thickens. Season with salt and pepper. Set aside to cool.

Assemble the Wellington
Roll out the puff pastry on a floured surface. Spread the cooled duxelles evenly over the pastry. Place the foie gras in the center, then the beef on top. Fold the pastry over the beef, sealing the edges with egg wash. Place seam side down on a baking sheet.

Prepare the Truffle Sauce
In a saucepan, combine truffle oil, cream, and a pinch of salt. Heat gently and whisk until combined and slightly thickened. Set aside.

Slice the Wellington and plate with a drizzle of truffle sauce. Enjoy your Would-Be Imposter!
