Prepare the Beef Tenderloin
Preheat your oven to 275°F (135°C). Season the beef tenderloin with olive oil, salt, and black pepper. Place it on a roasting rack in a baking dish.

Roast the Beef
Roast the tenderloin in the preheated oven for about 1.5 to 2 hours, or until it reaches your desired doneness. Let it rest for 15 minutes before slicing.

Make the Sauce au Poivre
In a saucepan, combine the beef broth and green peppercorns. Reduce over medium heat until it thickens slightly. Add the heavy cream and simmer for another 5 minutes. Season with salt to taste.

Prepare the Shoestring Potatoes
Julienne the potatoes and rinse them in cold water. Pat dry and fry in hot oil until golden brown and crispy. Drain on paper towels and season with salt.

Serve
Slice the beef tenderloin and serve with the sauce au poivre drizzled on top. Add the grilled endive and shoestring potatoes on the side.
