    Prepare the Beans

    Soak the butter beans overnight in water. Drain and rinse before cooking.

    Cook the Base

    In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened and fragrant, about 5-7 minutes.

    Add Beans and Stock

    Stir in the soaked butter beans, chicken stock, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 45 minutes, or until the beans are tender.

    Add Greens and Ham Hock

    Once the beans are cooked, add the winter greens and shredded ham hock. Cook for an additional 10 minutes until the greens are wilted.

    Cook the Trout

    In a separate pan, lightly drizzle olive oil and heat over medium-high. Season the ocean trout fillets with salt and pepper, and cook for about 3-4 minutes on each side, until cooked through.

    Prepare the Smoked Trout Bacon

    In the same pan, add the finely chopped smoked trout and sauté for 2-3 minutes until crispy.

    Ladle the bean and greens mixture into bowls, top with a piece of ocean trout, sprinkle with smoked trout bacon, and serve hot.
