Method

Braised Short Ribs

    Sear the Ribs

    Preheat the oven to 325°F (160°C). Season the beef short ribs with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.

    Add Liquids

    Pour in red wine, scraping the bottom of the pot to deglaze. Add beef broth, thyme, and bay leaves. Bring to a simmer.

    Braise the Ribs

    Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3-4 hours until the meat is tender and falling off the bone.

Sauce Bordelaise

    Prepare the Sauce

    In a saucepan, combine red wine and shallots. Reduce over medium heat until almost gone. Add beef stock and thyme. Reduce until thickened, then whisk in butter. Season to taste with salt and pepper.

Roasted Bone Marrow

    Roast the Marrow

    Preheat the oven to 400°F (200°C). Place bone marrow in a roasting pan, season with salt and pepper, and roast for 15-20 minutes until the marrow is soft and bubbly.

Winter Vegetables

    Roast the Vegetables

    Toss root vegetables with olive oil, salt, pepper, and thyme. Spread on a baking sheet and roast in the oven for 25-30 minutes until tender.
