Prepare the Farro Verde
In a medium pot, bring 4 cups of water to a boil. Add the farro verde and a pinch of salt. Reduce heat to low, cover, and simmer for about 30 minutes until tender. Drain and set aside.

Prepare the Vinaigrette
In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and black pepper. Set aside.

Sauté the Porcini and Pepitas
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped porcini mushrooms and sauté for 5-7 minutes until tender. Add the pepitas and cook for an additional 2-3 minutes until toasted.

Roast the Red Bell Pepper
Preheat the oven to 400°F (200°C). Cut the red bell pepper in half, remove seeds, and place on a baking sheet. Roast for about 20 minutes until charred. Allow to cool, then chop into small pieces.

Assemble the Dish
On a serving platter, layer the farro verde, sautéed porcini, and pepitas. Slice the rib eye steak and place on top. Garnish with roasted red bell pepper and drizzle with the prepared vinaigrette.
