Roast the Guinea Hen
Roast the guinea hen in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the hen with its juices every 20 minutes.

Bake the Strudel
Place the strudel on a baking sheet and bake for about 25 minutes at 375°F (190°C) until golden brown.

Prepare the Garnish
While the hen and strudel are baking, rinse the miner’s lettuce and set aside. Prepare the wild flowers for garnish.

Plate the Dish
Once the guinea hen is roasted, carve it and serve it alongside the stinging nettles strudel, topped with mountain huckleberries and garnished with miner’s lettuce and wild flowers.
