Cooking Instructions

  1. 1

    Prepare the Brown Butter Hollandaise

In a small saucepan, melt 1/2 cup of unsalted butter over medium heat. Allow it to cook until it turns golden brown and has a nutty aroma. Remove from heat and slowly whisk in 2 egg yolks, 1 tbsp lemon juice, and a pinch of salt until smooth. If the sauce is too thick, add a little water to reach desired consistency.

  2. 2

    Roast the Halibut

Preheat the oven to 400°F (200°C). Season the halibut fillets with salt and pepper. Heat a large oven-safe skillet over medium-high heat with a drizzle of olive oil. Sear the halibut for 2-3 minutes on each side until golden brown. Transfer the skillet to the oven and roast for 8-10 minutes, or until the fish flakes easily with a fork.

  3. 3

    Prepare the Spinach

In a separate pan, heat olive oil over medium heat. Add the Bloomsdale spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste.

  4. 4

    Fry the Sunchokes

Peel and slice the sunchokes thinly. In a frying pan, heat vegetable oil over medium-high heat. Fry the sunchoke slices until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels, then season with salt.

  5. 5

    Assemble the Dish

On each plate, place a bed of sautéed spinach, followed by the roasted halibut fillet. Drizzle the brown butter hollandaise over the fish, top with crispy sunchokes, and finish with a dollop of Passmore Ranch caviar.
