Peach Meringue Pie

    Prepare the Peach Filling

    In a saucepan, combine the fresh peaches, sugar, lemon juice, cornstarch, and water. Cook over medium heat until the mixture thickens and bubbles. Remove from heat and let cool.

    Make the Meringue

    In a bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, continuing to beat until stiff peaks form and the meringue is glossy. Stir in vanilla extract.

    Assemble the Pie

    Pour the peach filling into the pre-baked pie crust. Top with the meringue, spreading it out to cover the filling completely.

    Bake

    Bake in a preheated oven at 350°F (175°C) for 10-15 minutes or until the meringue is lightly golden.

Caramel Vanilla Swirl Ice Cream

    Prepare the Ice Cream Base

    In a bowl, whisk together the heavy cream, whole milk, sugar, and vanilla bean (with seeds). Chill the mixture in the refrigerator for at least 30 minutes.

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. Once the ice cream is thick, swirl in the caramel sauce.

    Transfer the ice cream to a container and freeze for at least 4 hours before serving.

    Make the Compote

    In a saucepan over medium heat, combine the diced peaches, sugar, and lemon juice. Cook until the peaches are soft and the mixture is syrupy. Let it cool before serving.
