    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add salt and grits, stirring constantly. Reduce heat to low and cook for about 20-25 minutes until creamy. Stir in Parmesan cheese and butter, mixing well. Keep warm.

    Cook the Bacon and Pancetta

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add pancetta and cook until crispy. Remove and drain as well.

    Sauté the Vegetables

    In the same skillet, add olive oil and heat. Add chopped onion, bell peppers, and minced garlic. Sauté until charred and soft, about 5-7 minutes. Season with salt and black pepper.

    Cook the Prawns

    Season the prawns with salt and black pepper. In the same skillet, add butter and allow it to melt. Add the prawns and cook for about 2-3 minutes on each side until they are pink and cooked through.

    Plate the Dish

    On each plate, add a scoop of creamy Parmesan grits, top with sautéed peppers and onions, then add the pan-roasted prawns. Drizzle with bacon jus made from the bacon drippings and garnish with crispy pancetta.
