Method

Cherry Clafoutis

  1. 1

    Prepare the batter

Preheat your oven to 350°F (175°C). Grease a pie dish. In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined. Gradually add the flour and milk, whisking until smooth.

  2. 2

    Combine with cherries

Pour the batter into the greased pie dish and scatter the pitted cherries evenly over the top.

  3. 3

    Bake

Bake in the preheated oven for 35-40 minutes or until puffed and golden brown. Let cool slightly before serving.

Almond Cake

  1. 4

    Prepare the batter

Preheat the oven to 350°F (175°C). Grease a round cake pan. In a bowl, whisk together the almond flour, sugar, baking powder, and salt. In another bowl, mix the melted butter, eggs, and vanilla extract.

  2. 5

    Combine and bake

Combine the wet and dry ingredients, mix well, and pour into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean.

Lemon Mousse

  1. 6

    Prepare the gelatin

In a small bowl, dissolve gelatin in water and let it bloom for 5 minutes.

  2. 7

    Make the mousse

In a separate bowl, whisk the egg yolks with sugar, then add lemon juice and the bloomed gelatin. In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the lemon mixture gently.

  3. 8

    Chill

Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.

White Chocolate-Candied Ginger Ice Cream

  1. 9

    Heat the mixture

In a saucepan, combine heavy cream, whole milk, and sugar. Heat until the sugar dissolves. Remove from heat and stir in chopped white chocolate until melted.

  2. 10

    Cool and churn

Let the mixture cool to room temperature, then stir in the vanilla extract and candied ginger. Pour into an ice cream maker and churn according to the manufacturer's instructions.

  3. 11

    Freeze

Transfer to a container and freeze until firm, about 4 hours.
