Butter Brittle

Method

Preparation of Bachelor’s Jam

  1. 1

    Make the Jam

In a saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 15 minutes. Let it cool.

Preparation of Brown Butter Ice Cream

  1. 2

    Brown the Butter

In a saucepan, melt the butter over medium heat, stirring constantly until it turns golden brown and has a nutty aroma. Set aside to cool slightly.

  2. 3

    Mix Ice Cream Base

In a bowl, whisk together heavy cream, milk, sugar, and egg yolks. Slowly pour in the browned butter while whisking until smooth.

  3. 4

    Churn the Ice Cream

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.

Preparation of French Toast

  1. 5

    Prepare the Egg Mixture

In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon.

  2. 6

    Cook the French Toast

Heat butter in a skillet over medium heat. Dip each slice of brioche into the egg mixture, allowing excess to drip off, and place in the skillet. Cook until golden brown on each side, about 3-4 minutes per side.

Preparation of Butter Brittle

  1. 7

    Make Butter Brittle

In a saucepan, combine butter, brown sugar, corn syrup, vanilla extract, and salt. Cook over medium heat until the mixture reaches a hard crack stage (300°F/150°C). Pour onto a parchment-lined baking sheet and let it cool. Break into pieces.
