Mousse Preparation

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.

    Heat Gelatin

    After blooming, heat the mixture in the microwave for 10 seconds until dissolved. Set aside.

    Make the Grapefruit Mixture

    In a large bowl, combine grapefruit juice and sugar. Stir until the sugar is dissolved. Add the dissolved gelatin and mix well.

    Whip Cream

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the grapefruit mixture.

    Whip Egg Whites

    In a clean bowl, beat egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the grapefruit mixture until well combined.

    Chill the Mousse

    Pour the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours until set.
