Preparation and Cooking

    Prepare the Scallops

    Lightly season the sea scallops with salt and black pepper. Heat a skillet over high heat and sear the scallops for about 1-2 minutes on each side until golden brown. Remove from heat and let them cool slightly before slicing them thinly.

    Make the Chili Scallion Glaze

    In a small bowl, mix soy sauce, sesame oil, red chili flakes, and finely chopped scallions. Set aside.

    Dry Fry the Pole Beans

    In a dry skillet, add the pole beans and cook over medium heat until they are blistered and slightly charred, about 5-7 minutes. Season with salt and pepper.

    Prepare Crispy Garlic

    Thinly slice the garlic cloves and fry them in oil over medium heat until golden brown. Remove and drain on paper towels.

    Assemble the Dish

    On a serving plate, arrange the sliced scallops. Drizzle the chili scallion glaze over the scallops. Add the dry-fried pole beans on the side and sprinkle crispy garlic and sesame seeds on top.
