    Prepare the Carrot-Apple Nage

    In a saucepan, melt 25 grams of butter over medium heat. Add chopped carrots and cook until softened, about 5 minutes. Add diced apple and cook for another 3 minutes. Pour in enough water to just cover the vegetables, season with salt and pepper, and simmer for 15 minutes. Strain the mixture and reserve the liquid.

    Cook the Butternut Squash

    In a separate pot, boil the butternut squash in salted water until tender, around 10 minutes. Drain and purée until smooth. Add crème fraiche, salt, and pepper to taste. Keep warm.

    Cook the Tortellini

    Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Crab Filling

    In a bowl, gently mix the Dungeness crab meat with black pepper and chopped chives. Adjust seasoning if necessary.

    Assemble the Dish

    In a large pan, heat olive oil and the remaining butter over medium heat. Add the cooked tortellini and sauté for 2-3 minutes until heated through. On each plate, create a pool of carrot-apple nage, spoon some butternut squash purée, and top with sautéed tortellini. Finish with crab mixture on top, garnish with additional chives.
