Method

Preparation

  1. 1

    Prepare the Tomatoes

Begin by washing the heirloom tomatoes thoroughly. Remove the stems and core, then chop them into quarters.

  2. 2

    Blend the Coulis

In a blender, combine the chopped tomatoes, olive oil, basil, thyme, sea salt, black pepper, and lemon juice. Blend until smooth.

  3. 3

    Strain the Mixture

Pour the blended mixture through a fine-mesh sieve or cheesecloth into a bowl to remove the seeds and skins, stirring gently to extract as much liquid as possible.

  4. 4

    Chill the Coulis

Cover the bowl with plastic wrap and refrigerate the coulis for at least 30 minutes before serving to allow the flavors to meld.
