    Prepare the Beef

    Season the rose beef breast with salt and black pepper. Heat olive oil in a large pot over medium heat and sear the beef on all sides until browned. Remove and set aside.

    Sauté Aromatics

    In the same pot, add minced garlic and fresh thyme, sauté until fragrant.

    Deglaze the Pot

    Pour in the white wine, scraping the bottom of the pot to release any browned bits. Let it simmer for a few minutes to reduce.

    Braise the Beef

    Return the beef to the pot, add the beef broth, cover, and bring to a gentle simmer. Cook for approximately 3 hours or until the beef is tender.

    Prepare the Vegetables

    In a separate pan, sauté the morel mushrooms and fava beans in a bit of olive oil until tender. Add the candied onions and mix well.

    Finish the Dish

    Once the beef is tender, remove it from the pot and let it rest for 10 minutes before slicing. Serve the beef slices topped with the sautéed vegetables and a dollop of Dijon mustard.
