    Prepare the Beef Tenderloin

    Season the beef tenderloin generously with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin for 4-5 minutes on each side until browned. Remove from skillet and let rest.

    Cook the Mushrooms

    In the same skillet, add minced garlic and shiitake mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and browned. Add herbs de Provence and stir to combine.

    Cook the Ravioli

    Meanwhile, cook the sweet corn ravioli according to package instructions. Drain and set aside.

    Prepare the Tomato Sauce

    Add heirloom tomatoes to the skillet with mushrooms and cook for an additional 5 minutes until the tomatoes soften and release their juices. Adjust seasoning with salt and pepper.

    Combine and Serve

    Slice the rested beef tenderloin and serve over the sweet corn ravioli. Top with the mushroom and heirloom tomato mixture. Garnish with fresh parsley.
