    Prepare the Snapper

    Clean and prepare the whole red snapper by scaling and gutting it. Rinse under cold water and pat dry with paper towels. Season the inside and outside with salt and black pepper.

    Make the Curry Base

    In a large pot, heat a tablespoon of oil over medium heat. Add the red curry paste and sauté for 2-3 minutes until fragrant. Pour in the coconut milk and stir well. Bring to a simmer.

    Cook the Mussels

    Add the moosebec mussels to the pot and cover. Cook for about 5-7 minutes until the mussels open. Discard any that remain closed.

    Add the Snapper

    Carefully add the seasoned whole red snapper to the pot. Spoon some of the curry sauce over the fish and cover. Cook for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

    Prepare the Greens

    While the fish is cooking, wash and prepare the mixed greens. In a separate pan, quickly sauté the greens in a bit of oil until just wilted. Season with a pinch of salt.

    Serve the Dish

    Once the snapper is cooked, carefully remove it from the pot. Place the fish on a serving platter and surround it with the mussels, sautéed greens, and sprinkle with crushed peanuts. Garnish with fresh herbs and lime wedges.
