Grilled Hanger Steak with Bacon Sweet Potato Hash, Greens, Blue Cheese Butter, & Red Wine Gastrique

Preparation Steps

Prepare the Steak
Season the hanger steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes before grilling.

Make the Blue Cheese Butter
In a small bowl, combine the softened butter and crumbled blue cheese. Mix well and set aside.

Cook the Bacon and Sweet Potato Hash
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon from the skillet and set aside, leaving the drippings in the skillet.

Sauté the Vegetables
Add the diced sweet potatoes to the skillet with the bacon drippings. Cook for about 10-15 minutes until they begin to soften. Add the diced onion and minced garlic, cooking until the onions are translucent.

Combine Hash Ingredients
Return the cooked bacon to the skillet and stir to combine. Season with salt and pepper to taste. Cook for another 5 minutes until sweet potatoes are tender and crispy.

Make the Red Wine Gastrique
In a small saucepan, combine the red wine, honey, and balsamic vinegar. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until reduced by half. In a small bowl, mix cornstarch with water to create a slurry, then add to the gastrique to thicken. Stir until combined.

Serve
Slice the grilled hanger steak against the grain and serve on a plate with a generous serving of bacon sweet potato hash, wilted greens, a dollop of blue cheese butter, and drizzle the red wine gastrique over the top.
