Purple Hull Peas & Collard Greens

    Cook the Purple Hull Peas

    In a large pot, add the purple hull peas and cover them with vegetable broth. Bring to a boil, then reduce the heat to a simmer. Cook for about 30 minutes, or until tender.

    Sauté the Collard Greens

    In a separate skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.

    Combine Ingredients

    Add the chopped collard greens to the skillet with onions and garlic. Stir in the cooked purple hull peas and the remaining vegetable broth if needed. Season with salt, black pepper, and red pepper flakes. Simmer for an additional 10 minutes until the greens are tender.

Griddled Cornbread

    Prepare the Cornbread Batter

    In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt. In another bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

    Cook the Cornbread

    Heat a griddle or skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter onto the griddle for each cornbread round. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.

Pepper Sauce

    Prepare the Pepper Sauce

    In a small saucepan, combine chopped hot peppers, vinegar, minced garlic, salt, and sugar. Bring to a simmer over medium heat and cook for about 10 minutes to allow the flavors to meld.

    Cool and Serve

    Remove the saucepan from heat and let the pepper sauce cool. Transfer to a jar and serve alongside the purple hull peas and cornbread.
