Prepare the Biscuit Dough
Preheat your oven to 425°F (220°C). In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Incorporate the Butter
Cut the unsalted butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour the buttermilk into the flour mixture and stir gently until just combined. Be careful not to overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes or until the tops are golden brown. Remove from the oven and let cool slightly.

In a medium bowl, beat the unsalted butter until it is light and fluffy. Add honey and a pinch of sea salt, and continue to beat until well combined and creamy.

Transfer the whipped butter to a serving bowl and set aside.

Place the warm biscuits on a serving platter.
