Prepare proteins
Preheat a large nonstick skillet over medium heat. Add the applewood smoked bacon slices and cook 3–4 minutes per side until crisp to your liking. Transfer bacon to a paper towel–lined plate and keep warm. In the same skillet, add the Conecuh sausage link and cook, turning occasionally, 6–8 minutes until browned and cooked through (internal temp 160°F / 71°C). If using ham, instead of sausage, sear the ham slice 1–2 minutes per side until warmed and lightly browned. Transfer sausage/ham to the plate with bacon and tent loosely with foil.

Cook the eggs (sunny-side or over-easy)
Wipe out excess fat from the skillet leaving about 1 teaspoon for flavor; add 1 tablespoon unsalted butter and 1 teaspoon vegetable oil and heat over medium-low. Crack the 2 large eggs into a small bowl (or directly into the pan) and gently slide into the skillet spaced apart. Season with 1 teaspoon salt and 1/4 teaspoon black pepper distributed between the two eggs. For sunny-side up: cook undisturbed 3–4 minutes until whites are set but yolks still runny; cover with a lid for 30–60 seconds to set the tops if needed. For over-easy: when whites are mostly set, gently flip each egg with a spatula and cook 15–30 seconds more. Remove eggs to a plate and keep warm with the cooked proteins.

While proteins cook, par-cook the diced potato: place diced potatoes in a microwave-safe bowl with 1 tablespoon water, cover, and microwave on high 3–4 minutes until slightly softened but not falling apart. Heat a medium skillet over medium-high heat and add 1 tablespoon olive oil. Add the par-cooked potatoes in an even layer and let sear, undisturbed, 3–4 minutes until golden on the underside. Stir and add the diced onion (1/4) and green bell pepper (1/4), season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon paprika and 1/4 teaspoon garlic powder. Continue to cook, stirring occasionally, 6–8 minutes until potatoes are tender and crisped to your liking. Taste and adjust seasoning. Stir in 1 tablespoon chopped parsley if using, then transfer to a serving dish and keep warm.
Toast & Plating

Toast 2 slices of bread to desired doneness. Spread 1 tablespoon softened butter across the hot toast. On a plate, arrange the breakfast potatoes, two eggs, and your choice of two bacon slices and either the Conecuh sausage link or the ham slice. Serve the toast on the side.
