Turkey Burger Patties

1. Prepare mixture

In a large bowl gently combine the ground turkey, panko breadcrumbs, egg, finely chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, kosher salt, and black pepper. Mix until just combined — avoid overworking to keep patties tender.

2. Form patties

Divide the mixture into 4 equal portions (about 4 oz each). Shape each portion into a patty about 3/4 inch thick and slightly wider than the bun. Make a shallow indentation in the center of each patty with your thumb to help them cook evenly and prevent puffing.

3. Chill (optional)

If time permits, place the patties on a plate, cover, and refrigerate for 15–30 minutes to help them hold together while cooking. This step is optional but recommended.

4. Cook patties

Heat a large nonstick or cast-iron skillet over medium-high heat and add 1 tablespoon olive oil. When the oil shimmers, add patties (do not overcrowd; cook in batches if needed). Cook until the bottom is browned and the edges show opaque color, about 4–5 minutes. Flip and cook the second side 4–5 minutes more, or until internal temperature reaches 165°F (74°C). During the last minute of cooking, place a slice of Swiss cheese on each patty and cover the skillet briefly to melt the cheese.

While patties cook, slice the tomato and thinly slice the red onion. Wash and dry lettuce leaves. Combine mayonnaise and yellow mustard in a small bowl and stir until smooth; adjust seasoning to taste.

6. Toast buns

Spread softened butter on the cut sides of the brioche buns. In a separate skillet or on a griddle over medium heat, toast the buns cut-side down until golden brown, about 1–2 minutes. Alternatively, toast under a broiler briefly—watch carefully to avoid burning.

7. Assemble burgers

Spread a thin layer of the mayo-mustard mixture on both top and bottom buns. Place a lettuce leaf on the bottom bun, then the Swiss-topped turkey patty, a tomato slice, and a few rings of red onion. Close with the top bun.

8. Serve

Serve immediately while burgers are hot. Offer extra mayo-mustard on the side and any preferred condiments. Leftovers can be refrigerated for up to 2 days (store patties separate from buns to avoid sogginess).
