    In a medium heavy-bottomed saucepan, combine 4 cups water and 1 cup whole milk. Add 1 teaspoon salt. Bring mixture to a gentle simmer over medium heat — small bubbles should appear at the edges but do not let it vigorously boil.

    Slowly whisk or sprinkle 1 cup stone-ground yellow grits into the simmering liquid while whisking or stirring constantly to prevent lumps. Reduce heat to low so the pot is barely simmering.

    Cook low and slow

    Cover the pot partially (leave a small gap for steam) and simmer the grits on low for 25–35 minutes, stirring every 3–5 minutes. Stone-ground grits benefit from slow cooking to soften the grains and develop creaminess. If the mixture gets too thick or begins to stick, add up to 1/2 cup more water or milk in small splashes and stir until smooth.

    Finish with butter and seasonings

    When the grits are tender and creamy (grains swollen but still with slight body), stir in 3 tablespoons unsalted butter and 1/4 teaspoon black pepper. Taste and adjust salt as needed.

    Remove the pot from heat. Stir in 3/4 cup grated sharp cheddar and 1/4 cup grated Parmesan until melted and fully incorporated. If you prefer extra richness, stir in 1/4 cup heavy cream now. If the grits tighten up after cooling, loosen with a splash of hot water or additional milk to reach desired consistency.
