Method
Salad Base

Prepare Greens and Vegetables
Rinse and dry the mixed salad greens thoroughly using a salad spinner or clean kitchen towels; place in a large serving bowl and chill briefly if desired.

Prepare Avocado
Halve the avocado, remove the pit, peel (or scoop), and dice into 1/2-inch pieces. Toss gently with a squeeze of lime (from the dressing amount or a wedge) to prevent browning and set aside.

Dice Tomatoes
Core and dice the tomatoes into roughly 1/2-inch pieces. If tomatoes are very juicy, drain excess seeds/juice on a paper towel before adding to the salad to avoid watering it down.

Prepare Corn
If using fresh corn: blanch ears in boiling salted water for 2 minutes, then plunge into ice water and cut kernels off the cob. If using frozen, thaw and pat dry. Measure 1 cup and set aside.

Cook Sausage
Slice or dice the sausage into 1/4- to 1/2-inch pieces. Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add sausage in a single layer and cook, turning occasionally, until well browned and crisp at edges, about 6–8 minutes.

Make Dressing
In a small bowl or jar, combine 3 tbs extra-virgin olive oil, 2 tbs fresh lime juice, 1 tsp honey, 1 tsp Dijon mustard, 1 minced garlic clove, 1 tsp smoked paprika, 1 tsp sea salt, and 1 tsp freshly ground black pepper. Whisk vigorously or shake in a lidded jar until emulsified and smooth. Taste and adjust seasoning — add more lime for brightness, salt for seasoning, or honey for sweetness.

Optional Pan-Boost
If you reserved browned bits from the sausage pan, deglaze the pan with 1 tablespoon of lime juice or a splash of water, loosen browned bits, let cool slightly, and whisk into the dressing for extra savory depth.
Assembly & Serve

Combine Salad
Add the diced tomatoes, corn kernels, and sausage pieces to the bowl with the mixed greens. Gently add the diced avocado last to avoid crushing it.

Dress Salad
Drizzle about half of the dressing over the salad and toss gently to coat. Add additional dressing to taste (typically all remaining dressing for a more dressed salad). Toss carefully so avocado stays intact.

Garnish and Finish
Sprinkle chopped cilantro or parsley over the top, adjust salt and pepper if needed, and serve with lime wedges on the side for extra brightness. Serve immediately so greens and avocado remain fresh.
