Method

Preparing the Pasta

  1. 1

    Cook the Spaghetti

In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

Making the Sauce

  1. 2

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until it is crispy, about 5-7 minutes. Remove from heat and set aside.

  2. 3

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

  1. 4

    Mix Pasta and Sauce

Add the drained spaghetti to the skillet with the pancetta. Toss to combine and return the pan to low heat.

  2. 5

    Add the Egg Mixture

Quickly pour the egg and cheese mixture over the pasta, stirring vigorously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it. Season with salt to taste.

  3. 6

    Garnish and Serve

Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
