Brewing Process

1. Mashing

In a large brew kettle, combine the malted barley and water. Heat to 65°C (149°F) and maintain this temperature for 60 minutes to allow the starches to convert to sugars.

2. Wort Separation

After mashing, separate the liquid wort from the grain by using a mash tun or a fine mesh strainer. Collect the wort in a boiling kettle.

3. Boiling

Bring the wort to a boil and add the hops. Boil for 60 minutes to extract bitterness and aroma from the hops.

4. Cooling

After boiling, quickly cool the wort to around 20°C (68°F) using a wort chiller or ice bath.

5. Fermentation

Transfer the cooled wort to a fermentation vessel, add the yeast, and seal with an airlock. Allow it to ferment for 10 to 14 days at a temperature of around 10°C to 12°C (50°F to 54°F).

6. Bottling

Once fermentation is complete, transfer the beer to a bottling bucket, add priming sugar (if desired), and bottle it in clean, sanitized bottles.

7. Carbonation

Let the bottles sit at room temperature for an additional 1 to 2 weeks for carbonation to develop. Then refrigerate before serving.
