Cook the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Cook the Pancetta
While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper to taste and mix well.

Combine Ingredients
Add the drained spaghetti to the skillet with the pancetta, and toss to combine. Quickly pour the egg and cheese mixture over the hot pasta, stirring vigorously to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Taste and adjust seasoning with salt and additional black pepper as needed. Serve immediately, garnished with extra Parmesan cheese if desired.
