Panna Cotta Base

    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5-10 minutes to bloom.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar is dissolved and the mixture is just about to boil.

    Combine Gelatin

    Remove the saucepan from heat. Add the bloomed gelatin to the hot cream mixture and stir until completely dissolved.

    Add Vanilla

    Stir in the vanilla extract into the mixture.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow them to cool slightly before transferring to the refrigerator.

    Chill

    Refrigerate the panna cotta for at least 4 hours or until set.

Berry Topping

    Prepare the Berries

    In a medium bowl, combine the mixed fresh berries, granulated sugar, and lemon juice. Toss gently to coat the berries.

    Chill the Topping

    Let the berry mixture sit for about 10-15 minutes at room temperature to macerate, or refrigerate if prepared in advance.

    Serve

    Once the panna cotta has set, top each serving with the berry mixture before serving.
