Lemons

Alcohol

Simple Syrup

Method

Preparation of Lemons

  1. 1

    Wash and Peel

Thoroughly wash the lemons under cold water to remove any wax or pesticides. Using a vegetable peeler or zester, carefully peel the lemons, avoiding the white pith as much as possible, as it can impart bitterness.

Infusion

  1. 2

    Combine Peels and Alcohol

In a large, clean glass jar, combine the lemon peels with the grain alcohol. Seal the jar tightly and store it in a cool, dark place. Let the mixture infuse for at least 7 days, shaking it gently every couple of days to mix the flavors.

Simple Syrup Preparation

  1. 3

    Make Simple Syrup

In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring continuously until the sugar has completely dissolved. Once dissolved, remove from heat and let cool.

Final Mixing

  1. 4

    Combine Infusion and Syrup

After the infusion period is complete, strain the lemon peels from the alcohol using a fine mesh strainer or cheesecloth. In a large bowl or jar, mix the lemon-infused alcohol with the cooled simple syrup. Adjust sweetness to taste by adding more syrup if desired.

  2. 5

    Bottle and Store

Using a funnel, pour the limoncello into clean, sterilized bottles. Seal tightly and store in the freezer. It is best served chilled.
