Preparation of Base

    Prepare the Milk and Cream Mixture

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just below boiling, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

    Combine Mixtures

    Slowly pour the hot milk mixture into the egg yolk mixture while whisking constantly to temper the eggs. Once combined, return the mixture to the saucepan.

    Cook the Custard

    Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

    Add Vanilla Extract

    Remove from heat and stir in the pure vanilla extract. Allow the custard to cool to room temperature.

Flavoring and Churning

    Add Flavorings

    Once the custard is cooled, you can divide it into different bowls for flavoring. For chocolate gelato, add cocoa powder; for strawberry gelato, mix in the pureed strawberries; for pistachio gelato, fold in the chopped pistachios; for coffee gelato, add the brewed coffee; for mint gelato, mix in the chopped mint leaves.

    Chill the Mixture

    Cover each bowl with plastic wrap and refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.

    Freeze the Gelato

    Transfer the churned gelato into an airtight container and freeze for at least 2 hours or until firm.
