Prepare the Baby Potatoes
In a pot of salted boiling water, add the halved baby potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

Cook the Chorizo and Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chorizo slices and cook until crispy, about 3-4 minutes. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the skillet and set aside.

Prepare the Bell Pepper Coulis
In a blender, combine the roasted bell pepper, uni, and a pinch of salt. Blend until smooth. Adjust seasoning to taste.

Assemble the Dish
On each plate, create a bed of baby potatoes, top with the shrimp and chorizo mixture. Arrange the seared scallops on top and drizzle with the bell pepper coulis. Garnish with thinly sliced radish, parsley, and cilantro.
