Foie Gras and Accompaniments
Method
Preparation and Serving
- 1
Prepare the Foie Gras
Season the foie gras slices with salt and black pepper on both sides.
- 2
Sear the Foie Gras
In a skillet over medium-high heat, melt the unsalted butter. Once hot, add the foie gras slices and sear for about 30 seconds to 1 minute on each side until golden brown and crispy. Remove from the skillet and let rest briefly.
- 3
Prepare the Strawberry Accompaniments
While the foie gras rests, prepare the strawberry crumble and gelée. Use fresh strawberries to create a simple crumble by mixing chopped strawberries with sugar and crushed Stroopwafels. For the gelée, puree fresh strawberries and strain to remove seeds, then mix with gelatin according to package instructions and chill until set.
- 4
Plate the Dish
On a plate, place the seared foie gras on top of a Strawberry Stroopwafel. Add a spoonful of strawberry crumble on the side, a dollop of strawberry gelée, and finish with a light drizzle of almond foam.
