Making the Pancakes

Prepare the batter
In a large bowl, whisk together the buckwheat flour, baking powder, cinnamon, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.

Cook the pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

Plate the pancakes
Serve the pancakes warm, stacked high, drizzled with maple syrup, and topped with wild berries. On the side, serve crispy smoked bacon.
