    Dry and season the fillets

    Pat the cod fillets dry with paper towels. Place them on a rimmed baking sheet or plate. Sprinkle the kosher salt evenly over both sides (about 1/2 tsp per fillet total) and distribute the black pepper, lemon zest, and garlic powder across the top side. Let the fillets sit at room temperature while you prepare vegetables and preheat the oven (10–15 minutes).

    Resting note

    Resting briefly at room temperature helps even cooking and allows the seasoning to adhere. Do not leave fish out longer than 30 minutes.

Oil & Aromatics

    Prepare lemon-herb oil

    In a small bowl, whisk together 3 tbsp extra-virgin olive oil, 1 tbsp melted unsalted butter, and 2 tbsp fresh lemon juice. Stir in chopped parsley, thyme leaves, and capers. Reserve about 1 tbsp of this mixture to finish the fish after roasting.

    Brush fillets

    Brush the remaining lemon-herb oil evenly over the top of each seasoned cod fillet. This will help the surface brown lightly and keep the fish moist.

    Preheat oven to 425°F (220°C). Toss the halved fingerling potatoes, cherry tomatoes, and sliced shallot with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a rimmed baking sheet or in a roasting pan. Spread them into a single layer, leaving a central area or space for the cod fillets if using the same pan.

    If the potatoes are raw and larger, roast the vegetables for 12–15 minutes first so they begin to soften and brown. After that initial roast, move vegetables to the sides and place the seasoned, oiled cod fillets skin-side down (if skin-on) into the pan among the vegetables. If potatoes are small or pre-cooked, you can place fillets on the pan at the start.

Roasting & Finishing

    Roast the cod

    Place the baking sheet in the preheated oven and roast until the cod is opaque and flakes easily with a fork. For 6 oz fillets about 3/4–1 inch thick, roast 10–12 minutes at 425°F (220°C). If fillets are thicker (1–1 1/2 inch), roast 12–15 minutes. Oven times vary—start checking at the earlier time to prevent overcooking.

    Finish with reserved oil

    When the cod is done, remove the pan from the oven. Spoon the reserved 1 tbsp lemon-herb oil and any pan juices over each fillet. Let fish rest 2 minutes on the warm pan.

    Garnish and serve

    Sprinkle additional chopped parsley and an extra squeeze of lemon if desired. Serve the roasted cod on a bed of the roasted vegetables or with steamed greens, rice, or a simple salad.
