Score and season

Pat duck breasts dry with paper towels. Using a sharp knife, lightly score the skin in a diamond pattern without cutting into the meat. Season both sides liberally with kosher salt and freshly ground black pepper; press seasoning into the skin.

Render skin and sear

Place a large cold skillet (preferably cast iron) over medium-low heat and add the duck breasts skin-side down without oil. Cook gently for 10–12 minutes, pressing occasionally and pouring off excess fat if it accumulates, until skin is deeply golden-brown and most fat has rendered. If needed, turn heat up slightly near the end to achieve crispness.

Finish in oven

Brush the flesh side with 1 tablespoon olive oil. Flip breasts and sear flesh side 1 minute. Transfer skillet to a 200°C (400°F) oven for 6–8 minutes for medium-rare (internal temp 57–60°C / 135–140°F). Adjust time for desired doneness. Remove from oven and transfer breasts to a cutting board; tent loosely with foil and rest 8–10 minutes.

Sweat aromatics

While the duck rests, wipe out excess fat from the skillet leaving about 1 tablespoon of rendered fat (or use a clean saucepan). Melt 2 tablespoons unsalted butter over medium heat. Add minced shallots and sauté until translucent, about 2–3 minutes. Add minced garlic and cook 30–45 seconds until fragrant.

Deglaze and reduce

Pour in the dry red wine to deglaze the pan, scraping any browned bits from the bottom. Increase heat to medium-high and reduce the wine by about two-thirds, about 4–6 minutes, until slightly syrupy.

Add stock and cream

Add the chicken or duck stock and fresh thyme; bring to a simmer and reduce the liquid by about half, 6–8 minutes. Stir in the heavy cream and continue to simmer gently for 2–3 minutes to thicken slightly.

Finish with truffle

Lower heat to low. Whisk in 1 tablespoon unsalted butter to enrich the sauce, then add Dijon mustard, black truffle paste (or grated truffle), and season with salt and freshly ground black pepper. If using fresh black truffle slices, stir them in or reserve a few slices for garnish. Taste and adjust seasoning. Keep sauce warm but do not boil once cream and truffle are added.

Finish & Plating

Slice the rested duck breasts on a slight diagonal into 1/4-inch (6–7 mm) slices. Arrange slices fanned on warm plates.

Spoon the black truffle sauce over and around the duck slices. Dot with remaining cold cubed butter and whisk quickly into the sauce on the plate if you want a glossy finish, or stir into the sauce in the pan just before spooning.

Scatter thin fresh truffle slices (if using), microgreens or parsley, and finish with a light sprinkle of flaky sea salt and a grind of black pepper.

Serve immediately with your choice of sides (parmentier potatoes, wild mushroom risotto, or roasted root vegetables recommended).
