Prep & Cook Kielbasa

Preheat and slice
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly dust a clean work surface with 1–2 tablespoons of flour.

Trim and halve
If the kielbasa is one long link, cut it into 8–10 pieces about 3–4 inches long so each piece fits comfortably inside a pastry strip. If using shorter links, leave whole.

Optional quick sear
For extra flavor, heat a skillet over medium-high heat with 1 teaspoon neutral oil and sear kielbasa pieces 1–2 minutes per side until nicely browned. Transfer to a plate to cool slightly. (This step is optional because smoked kielbasa is already cooked.)

Roll out pastry
Unfold thawed puff pastry sheets on the floured surface. Using a rolling pin, gently roll each sheet once or twice to press creases and lightly enlarge to about 12 x 10 inches. Keep pastry cold; if it becomes sticky, chill 5–10 minutes.

Cut strips
Using a sharp knife or pizza cutter, cut each pastry sheet into 8 equal strips (approx. 1.25–1.5 inches wide). You should have about 16 strips total from 2 sheets — one strip per kielbasa piece.

Spread mustard and add cheese
Spread about 1/2 teaspoon Dijon mustard lengthwise down the center of each pastry strip. Sprinkle or place about 1 tablespoon shredded or a thin slice of cheddar on top of the mustard where the kielbasa will sit.

Wrap kielbasa
Place a kielbasa piece near one short end of a strip and roll the pastry around it, seam-side down, leaving the ends of the kielbasa slightly exposed if desired. Repeat with remaining strips and kielbasa.

Arrange on sheet
Place assembled pigs in a blanket on the prepared baking sheet, spaced 1 inch apart. Brush each roll with egg wash (beat 1 egg with 1 tsp cold water). Sprinkle everything bagel seasoning or sesame seeds on top if using.

Bake
Bake in the preheated 400°F (200°C) oven for 15–20 minutes, rotating the pan halfway through, until the pastry is puffed and deep golden brown.

Cool briefly
Remove from oven and let rest on the baking sheet for 3–5 minutes to set. Transfer to a wire rack for another 2–3 minutes; serve warm.

Serve with Dijon and whole grain mustards, ketchup, and pickles on the side as desired.
