    Prepare tools

    Chill a rocks or Old Fashioned glass by filling it with ice and set aside. Gather a cocktail shaker, jigger, bar spoon, and strainer.

    Measure and combine

    Add 2 oz dark rum, 3 tsp Campari (equivalent to 1/2 oz), 1.5 oz fresh pineapple juice, 1/2 oz fresh lime juice, 1/2 oz simple syrup, and 1 dash Angostura bitters into the cocktail shaker.

    Add ice and shake

    Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for about 10–15 seconds, until the shaker is well chilled and slightly frosted.

    Prepare glass

    Dump the ice from the chilled serving glass and fill it with fresh ice (crushed or cubes) as desired.

    Strain and serve

    Double-strain the shaken cocktail into the prepared glass over fresh ice using a Hawthorne or fine strainer to remove small ice shards and pulp.

    Garnish

    Garnish with a pineapple wedge or a pineapple leaf and an optional maraschino cherry. Serve immediately.

    Notes

    Adjust sweetness by increasing/decreasing simple syrup by 1/4 oz. Use high-quality dark rum for depth; aged Jamaican-style rums are traditional. Fresh pineapple juice is recommended for best flavor.
