Frog Legs

    Prep frog legs

    Rinse trimmed frog legs and pat dry with paper towels. Season lightly on both sides with 1/2 tablespoon kosher salt and 1/2 teaspoon freshly ground black pepper.

    Set up dredging stations

    In a shallow bowl, whisk together flour, cornmeal, remaining 1/2 tablespoon kosher salt and remaining 1/2 teaspoon black pepper. In a second bowl, whisk eggs with 1/4 cup whole milk until smooth.

    Dredge frog legs

    Working in batches, dredge each frog leg first in the flour-cornmeal mixture, shaking off excess, then dip into the egg wash, letting excess drip back into the bowl, then return briefly to the flour-cornmeal for a light coating. Place on a wire rack while you heat the pan.

    Pan-fry frog legs

    Heat a large skillet over medium-high heat. Add 2 tablespoons neutral oil and 2 tablespoons unsalted butter. When butter foams and oil is shimmering (about 1–2 minutes), add frog legs in a single layer without crowding. Cook 2–3 minutes per side until golden brown and just cooked through (internal temperature ~145°F/63°C or flesh opaque and flakey). Transfer to a paper towel-lined tray and tent loosely with foil. Continue with remaining legs, adding remaining 1 tablespoon butter as needed.

    Finish with lemon

    Squeeze half a lemon over the cooked frog legs just before plating for brightness.

Persillade & Breadcrumbs

    Toast breadcrumbs

    In a separate small skillet over medium heat, warm 1 tablespoon olive oil. Add 3/4 cup panko breadcrumbs and toast, stirring frequently, until golden and crisp, about 4–6 minutes. Transfer to a bowl to cool slightly.

    Make persillade

    To the cooled breadcrumbs, add 3/4 cup finely chopped parsley, 2 minced shallots, 2 minced garlic cloves, 1/4 cup grated Parmesan, remaining 1 tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss until evenly combined. Taste and adjust salt. The mixture should be moist but crumbly.

    Apply persillade

    While frog legs are still warm, spoon or press a tablespoon of the persillade-breadcrumb mix onto each leg so it adheres slightly to the buttered surface. The warmth will marry flavors and lightly toast the parsley and shallot.

Pickled Ramp Aioli

    Prepare base emulsification

    In a small bowl, whisk together 1 egg yolk, 1 teaspoon Dijon mustard, 1 tablespoon lemon juice, and 1 teaspoon reserved ramp pickle brine until smooth and slightly glossy.

    Emulsify oil

    Very slowly, drop by drop to start, whisk in the 1/2 cup neutral oil until the mixture begins to thicken. Once an emulsion forms, continue whisking while steadily pouring the oil in a thin stream until fully incorporated. Whisk in 1 teaspoon extra-virgin olive oil for flavor.

    Finish aioli

    Stir in the finely chopped 4 pickled ramps, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust acidity with a little more lemon juice or ramp brine if desired. Refrigerate until ready to serve; bring to cool room temperature before plating.

Finish & Serve

    Plate 3 frog legs per portion. Spoon a dollop (about 1 tablespoon) of pickled ramp aioli beside or under the legs. Top each leg with a generous sprinkle of the persillade-breadcrumb mixture and a few small parsley leaves or microgreens. Serve with lemon wedges on the side.

    Serve immediately so the frog legs remain warm and crisp, with the aioli chilled for contrast.
