Tater Tot Base

    Preheat and prepare

    Preheat the oven to 425°F (220°C). Arrange a wire rack over a rimmed baking sheet and brush the rack lightly with the 1 tablespoon neutral oil to prevent sticking. This helps tater tots crisp all around.

    Place frozen tater tots in a single layer on the prepared rack. Dot the tops with small bits of the 2 tablespoons butter (or brush melted butter over them) and season lightly with half of the fine sea salt and half of the black pepper.

    Bake for 20–25 minutes, turning once halfway through, until deeply golden and crisp. If you want extra crispness, carefully heat the optional grapeseed oil in a medium skillet over medium-high and pan-fry baked tots 1–2 minutes per side to blister the exterior. Keep warm in a low oven (200°F / 95°C) while preparing the purée and plating.

Potato Purée (creamy base under the caviar)

    Place the peeled, cubed Yukon Gold potatoes in a medium saucepan and cover with cold water by 1 inch. Add a pinch of salt. Bring to a simmer over medium-high heat and cook until potatoes are very tender and break apart with a fork, about 12–15 minutes.

    While the potatoes cook, gently warm the heavy cream and 1 tablespoon butter in a small saucepan or microwave until the butter melts and the mixture is hot but not boiling.

    Drain the potatoes well and return them to the still-warm pot. Mash thoroughly with a potato masher or pass through a ricer for the smoothest texture. Add the warm cream-butter mixture and the 1 tablespoon cream cheese. Stir until velvety and smooth. Season with 1/2 teaspoon fine sea salt and 1/4 teaspoon white pepper to taste. Keep warm.

    For a thinner, spreadable consistency suitable for topping tater tots, adjust with up to 1–2 tablespoons more warm cream if needed so the purée can be piped or spooned easily.

Garnishes & Finish

    If using crème fraîche, whisk it with the lemon juice and lemon zest and a pinch of flaky sea salt to brighten. This will be a small dollop under the caviar to balance richness.

    To assemble each serving (serves 4 as an appetizer—about 6 tots per person): On a warm platter or individual plates, place 6 hot, crisp tater tots grouped together. Using a small spoon or piping bag, put a tablespoon of warm potato purée on top of each tot, smoothing slightly to create a little nest.

    On top of the purée, add a small quenelle or 1/2 teaspoon of the crème fraîche mixture, then gently place about 1/2 ounce (approximately 0.5 oz) of caviar on each tot (total 2 oz for four servings). Avoid pressing—caviar should sit gently so the pearls remain intact.

    Scatter snipped chives and microgreens around and lightly over the tots. Finish with a few flakes of sea salt and a tiny grating of additional lemon zest if desired. Serve immediately so the tater tots stay crisp and the caviar is cool.

    Leftover notes: Keep extra caviar chilled and serve within the same day. Re-crisp leftover tots in a hot oven or skillet; do not microwave if you want to preserve crunch.
