    parboil potatoes

    Place the diced potatoes in a medium pot and cover with cold water by 1 inch. Add 1/4 tsp salt. Bring to a boil over high heat, then reduce to a simmer and cook until just tender when pierced with a fork, about 6–8 minutes. Drain well and let steam dry for 2–3 minutes.

    preheat pan

    Heat a large skillet over medium-high heat. Add the 2 tbs oil and swirl to coat.

    brown potatoes

    Add the drained potatoes in a single layer (work in batches if needed). Cook without moving for 3–4 minutes to develop a golden crust, then stir or flip and continue cooking another 4–6 minutes until most sides are golden and crisp.

    add aromatics & season

    Reduce heat to medium. Push potatoes to the side and add the chopped onion and diced red bell pepper to the skillet; cook 3–4 minutes until softened. Stir in the minced garlic, smoked paprika, and dried thyme; cook 30 seconds until fragrant. Return potatoes to even heat, season with 3/4 tsp salt and 1/4 tsp black pepper, stir to combine and cook 1–2 minutes more to marry flavors. Keep warm on the lowest heat setting while you cook the eggs.

    choose style

    Decide which style you want for the organic eggs: fried (sunny-side up or over-easy), scrambled, poached, or soft-boiled. The following directions cover fried (sunny-side/over-easy) and scrambled. For poached or soft-boiled, see the notes below.

    fried eggs (sunny-side or over-easy)

    Heat a nonstick skillet over medium-low and add 1 tbs unsalted butter. When butter foams but before it browns, crack the eggs into the pan (or into a small bowl and gently slide in). Season with a pinch of salt and a grind of pepper. For sunny-side up: cook undisturbed 2–3 minutes until whites are set but yolks jiggle. For over-easy: when whites are set, gently flip with a spatula and cook 15–30 seconds for runny yolk. Remove to plate.

    scrambled eggs

    Crack the eggs into a bowl, add 1/8 tsp salt and a pinch of pepper, and beat lightly until combined. Heat a nonstick skillet over medium-low and melt 1 tbs butter. Pour eggs into the pan and let sit undisturbed for 10–15 seconds, then gently stir with a rubber spatula, folding eggs from the edges into the middle. Cook to desired doneness (soft and slightly runny 1–2 minutes). Remove from heat just before fully set — residual heat will finish them. Sprinkle minced chives if using.

    plate and serve

    Arrange a generous portion of home fries on the plate and top or place the eggs alongside. Garnish eggs with remaining chives (if using) and an extra pinch of salt and pepper to taste. Serve immediately.

    notes (poached or soft-boiled)

    For poached: bring a shallow pan of water with 1 tbs vinegar to a gentle simmer, create a whirlpool, slide in a cracked egg, and cook 3–4 minutes for a runny yolk. For soft-boiled: simmer whole eggs in boiling water for 6–7 minutes, then transfer to an ice bath before peeling.
