    Preheat and prepare

    Preheat the oven to 325°F (160°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat for easy removal and even baking.

    Mix dry ingredients

    In a large mixing bowl combine 3 cups rolled oats, 0.75 cups chopped almonds, 0.5 cups chopped pecans or walnuts, 0.25 cups coconut flakes (if using), 0.25 cups sunflower seeds, 0.25 cups pumpkin seeds, 1 tsp ground cinnamon, and 0.5 tsp fine sea salt. Stir until evenly distributed.

    Combine wet ingredients

    In a small bowl or measuring cup whisk together 0.333 cups acacia honey, 2 tbsp neutral oil, and 1 tsp vanilla extract until smooth and slightly runny. If the honey is very thick, warm it briefly (10–15 seconds) in the microwave or over a double boiler to loosen, then whisk.

    Coat and spread

    Pour the honey mixture over the dry oats-and-nuts mixture. Using a sturdy spatula, toss and stir until the dry ingredients are thoroughly coated and evenly moistened. Spread the mixture in an even layer on the prepared baking sheet, pressing lightly so some clusters form but not compacting too densely (this helps with crispness).

    Bake, stir, and finish

    Bake at 325°F (160°C) for 18–25 minutes total, stirring gently every 8–10 minutes to promote even browning. After the first 10 minutes, rotate the pan if your oven has hot spots. Watch closely during the last 5 minutes — the granola should be golden brown and fragrant but not burned. If you prefer chunkier clusters, press the granola gently with the back of a spatula immediately after removing it from the oven.

    Cool completely

    Allow the granola to cool completely on the baking sheet (about 30–40 minutes). It will crisp up as it cools. Once cooled, break into clusters of your desired size.

    Store

    Transfer cooled granola to an airtight container. Store at room temperature for up to 2 weeks or in the freezer for up to 3 months. If you like extra crunch, toast briefly in a skillet before serving.

Toppings & Serving

    Portion the yogurt: Spoon 1 cup of Greek yogurt into each of 3 serving bowls or jars (recipe yields 3 servings).

    Add berries: Divide the 2 cups of mixed fresh berries evenly among the bowls, arranging them on top of or beside the yogurt.

    Top with granola and honey: Sprinkle about 3/4 to 1 cup of the homemade granola over each bowl (adjust to preference). Drizzle approximately 2/3 to 1 tbsp of additional acacia honey over each serving (use the 2 tbsp reserved total), or to taste.

    Finish and serve: If using, sprinkle a little grated lemon zest over each bowl for brightness. Serve immediately so the granola stays crisp. Leftover granola can be kept airtight as noted above.
