    Prep

    Pat salmon fillets dry with paper towels. Season both sides and the skin lightly with kosher salt and freshly ground black pepper. Let rest at room temperature for 10 minutes while you prepare other components.

    Pan-sear Salmon

    Heat a large heavy skillet (cast iron or stainless) over medium-high heat until hot. Add neutral oil and swirl to coat. Place salmon fillets skin-side down, pressing gently with a spatula for 10 seconds to ensure even contact. Cook skin-side down for 4–5 minutes without moving, until skin is crisp and the fish is cooked about two-thirds of the way up the side. Flip carefully and cook 30–60 seconds more for medium (adjust time for thicker fillets). Remove salmon to a warm plate, skin-side up, and tent loosely with foil while you finish sauces and mushrooms.

Ponzu Brown Butter

    Make Brown Butter

    In a small stainless-steel or light-colored saucepan, melt 8 tbs unsalted butter over medium heat. Swirl frequently; watch closely. The butter will foam, then begin to turn a light golden-brown and give a nutty aroma (5–7 minutes). Remove from heat as soon as you see small brown bits on the bottom and a toasted aroma to avoid burning.

    Finish with Ponzu

    Allow the brown butter to cool for 30 seconds off the heat, then whisk in 4 tbs ponzu sauce and 1 tbs mirin (if using) until glossy and combined. Stir in grated ginger and minced chives or scallion. Taste and adjust: add up to 1 tsp extra ponzu if you want more acidity. Keep warm (very low heat) until ready to plate.

Beech Mushroom Sauté

    Prepare Mushrooms

    Trim and separate beech mushrooms into small clusters. Pat dry if damp.

    Sauté

    In a medium skillet over medium-high heat, add 1 tbs butter and 1 tbs neutral oil. When butter foams, add sliced garlic and cook 20–30 seconds until fragrant (do not brown). Add mushrooms in a single layer (work in batches if necessary). Let mushrooms sear without stirring for 1–2 minutes to develop color, then toss and continue to cook 2–3 minutes until tender and edges are golden. Add 1 tsp light soy sauce, 1 tbsp lemon juice and 1/2 tsp freshly ground black pepper; toss to coat and cook 30 seconds more. Remove from heat.

Garnish & Finish

    Plate assembly: Spoon a little ponzu brown butter on the plate (or drizzle over a ring of mushrooms), place a generous portion of sautéed beech mushrooms beside or partially under each salmon fillet, set the salmon on top or alongside with skin showing. Spoon additional ponzu brown butter over the salmon (about 1 tbs per fillet) being careful not to drown the crispy skin. Scatter microgreens or baby watercress over the mushrooms and salmon, sprinkle toasted sesame seeds and finish with a light pinch of flaky sea salt and a lemon wedge on the side.

    Serve immediately while salmon is warm and skin is crisp. Offer extra ponzu brown butter at the table.
