Preparation

    Prepare the ribeye

    Thinly slice the ribeye steak against the grain and season with salt and black pepper.

    Caramelize the onions

    In a skillet over medium heat, add olive oil. Add thinly sliced onions and cook until they are golden brown and softened, about 15-20 minutes.

    Cook the beef

    In the same skillet, increase the heat to high and add the sliced ribeye. Cook for 2-3 minutes until just browned. Remove from heat.

    Prepare the au jus

    In a saucepan, heat the beef broth over medium heat. Once warmed, set aside for dipping.

    Assemble the sandwich

    Slice the French baguette lengthwise. Layer the caramelized onions, cooked ribeye, and Emmental cheese inside the baguette.

    Melt the cheese

    Place the assembled sandwich under the broiler for 2-3 minutes until the cheese is melted and bubbly.
