Heat olive oil in a skillet over medium heat. Place the assembled sandwiches in the skillet and grill until golden brown, about 3-4 minutes per side, pressing down gently with a spatula.

Heat a non-stick skillet or griddle over medium heat and add butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.
