Method

Preparation of the Custard

  1. 1

    Step 1: Preheat the Oven

Preheat your oven to 325°F (160°C).

  2. 2

    Step 2: Heat the Cream

In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and let it cool slightly.

  3. 3

Step 3: Whisk the Egg Yolks and Sugar

In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

  4. 4

Step 4: Combine Cream and Egg Mixture

Slowly pour the warm cream into the egg yolk mixture, whisking constantly to prevent the eggs from curdling. Stir in the vanilla extract.

  5. 5

    Step 5: Strain the Mixture

Strain the custard mixture through a fine-mesh sieve into another bowl to remove any curdled bits.

Baking the Custard

  1. 6

    Step 6: Prepare the Ramekins

Place six ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.

  2. 7

    Step 7: Water Bath

Carefully pour hot water into the baking dish around the ramekins, ensuring the water reaches halfway up the sides of the ramekins.

  3. 8

    Step 8: Bake

Bake in the preheated oven for about 30-35 minutes, or until the custard is set but still slightly jiggly in the center.

  4. 9

    Step 9: Cool and Chill

Remove the ramekins from the water bath and let them cool at room temperature. Once cool, refrigerate for at least 2 hours or overnight.

Caramelizing the Topping

  1. 10

    Step 10: Prepare for Caramelization

Once the custards are chilled, sprinkle about 2 teaspoons of granulated sugar evenly over the top of each custard.

  2. 11

    Step 11: Caramelize the Sugar

Using a kitchen torch, carefully melt the sugar until it is golden brown and bubbling. If you don’t have a torch, place the ramekins under a broiler for a few minutes, watching closely to avoid burning.

  3. 12

    Step 12: Serve

Allow the caramelized sugar to cool and harden for a minute before serving. Enjoy your homemade crème brûlée!
