Main Ingredients

Method

Preparation

  1. 1

    Prepare the Chicken

Season the chicken pieces with salt and black pepper. Set aside.

  2. 2

    Cook the Bacon

In a large Dutch oven or heavy pot, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside.

Cooking

  1. 3

    Brown the Chicken

In the same pot with the bacon fat, add the chicken pieces skin-side down. Cook until browned on both sides, about 5-7 minutes per side. Remove the chicken and set aside.

  2. 4

    Sauté Vegetables

In the same pot, add the pearl onions and mushrooms. Sauté until browned, about 5 minutes. Add the minced garlic and cook for an additional minute.

  3. 5

    Combine Ingredients

Sprinkle flour over the vegetables and stir well to combine. Slowly pour in the red wine and chicken broth while stirring to avoid lumps.

  4. 6

    Add Chicken and Herbs

Return the chicken and bacon to the pot. Add thyme and bay leaves. Bring the mixture to a simmer.

  5. 7

    Braise

Cover the pot and reduce the heat to low. Let it braise for about 1.5 hours, or until the chicken is tender.

Serving

  1. 8

    Serve

Remove bay leaves before serving. Serve hot, garnished with fresh parsley if desired. Enjoy with crusty bread or over mashed potatoes.
