Preparing the Broth

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the sliced leeks and chopped onion. Sauté until they are soft and translucent, about 5-7 minutes.

    Add Garlic and Tomatoes

    Stir in the minced garlic and cook for 1 minute until fragrant. Add the chopped tomatoes and cook for another 5 minutes, allowing them to break down.

    Combine Liquids

    Pour in the fish stock and white wine. Bring to a simmer.

    Infuse with Spices

    Add the saffron threads, bay leaf, fresh thyme, salt, and black pepper to the pot. Let the mixture simmer for about 15 minutes.

Cooking the Seafood

    Add Seafood

    After the broth has simmered, add the white fish, mussels, shrimp, and squid. Stir gently to combine.

    Simmer and Cook

    Cover the pot and simmer for about 10 minutes, or until the seafood is cooked through and the mussels have opened.

Serving

    Garnish and Serve

    Ladle the bouillabaisse into bowls, garnish with chopped parsley, and serve with rouille on the side if desired.
