Braised Pork

In a slow cooker, combine pork shoulder, chopped onion, minced garlic, cumin, chili powder, salt, and black pepper. Add enough water to cover the meat. Cook on low for 8 hours or until the pork is tender. Shred the pork with two forks and set aside.

Raw Corn Salad

In a bowl, mix together raw corn kernels, diced red onion, chopped cilantro, and lime juice. Season with salt and pepper to taste.

Whipped Avocado

In a bowl, mash the avocados with sour cream until smooth. Season with salt and lime juice to taste.

Assembly

Warm the tortillas in a dry skillet. To assemble, place a generous amount of the shredded pork on a tortilla, top with raw corn salad, a dollop of whipped avocado, and a spoonful of salsa. Serve immediately.
