Prepare the Chorizo and Vegetables

In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Add the chopped onion, garlic, and red bell pepper, and sauté until softened, about 3-4 minutes.

Add the Rice and Spices

Stir in the Arborio rice, saffron, smoked paprika, salt, and black pepper. Cook for 2 minutes, stirring frequently to toast the rice.

Add the Broth

Pour in the broth and bring to a boil. Reduce heat to low and let it simmer for about 15 minutes without stirring.

Add the Seafood

After 15 minutes, gently arrange the mussels, fish chunks, and prawns on top of the rice. Cover the pan with a lid or aluminum foil and cook for an additional 10-12 minutes, or until the seafood is cooked through and the mussels have opened.

Finish and Serve

Remove the pan from heat and let it rest for 5 minutes. Garnish with green peas and serve with lemon wedges.
